When cooking with charcoal or wood, make sure you have the proper equipment. Remove the chimney cap and fully open the vent. Install the door of your choice after ensuring that the ceiling vent is also open.

Pizzas cooked much more uniformly through the crust and browned more evenly, but there was noticeably less leopard of the crust edges as you would get with charcoal and wood, and the finished product lacks a subtle smokiness. Nonetheless, the pizzas were delicious, and gas cooking required far less monitoring than having to add fuel every few minutes.
I recommend purchasing the gas burner to fully utilize the Ooni Pro 16’s capabilities. We should always plan ahead of time and have the time to manage a wood or charcoal fire, but there are times when you just need to get dinner on the table quickly, which is where the gas burner comes in. You don’t have to watch over the Ooni fire with gas, so you can tend to other dishes or entertain guests.
If you don’t anticipate using the wood or charcoal portion, consider the Ooni Koda 16. It is only powered by gas and is less expensive.
