This simple recipe calls for only five basic ingredients, all of which can be found in the produce section of your grocery store or at a farmer’s market during the summer months.

INGREDIENT HIGHLIGHTS

  • Extra virgin olive oil: For the best flavor, use extra virgin olive oil when making fresh tomato pizza sauce.
  • Tomatoes: Roma tomatoes, also known as Italian or Plum tomatoes, are the best type of tomatoes to use when making Italian pizza sauce. They are a flavorful tomato, especially when ripe and in season, and their skins are extremely easy to remove, making them an excellent choice for this sauce recipe.
  • Fresh basil: Fresh herbs are the ideal complement to a no-cook pizza sauce recipe, allowing their flavors to shine.

When making this recipe, make sure to use fresh garlic.

EQUIPMENT

Nothing fancy is required to make no-cook pizza sauce with fresh tomatoes, but you will need something to chop the tomatoes.

Don’t be intimidated by all of the pictures and steps here! I’m just going to show you how to remove the skins from the tomatoes and then make the sauce.

  • Step 1: Make an “x” in the bottom of each tomato and place it in a heatproof bowl.
  • Step 2: Cover the tomatoes with boiling water and set aside for 5 minutes.
  • Step 3: Next, remove the tomato peels.
  • Step 4: Continue until all of the tomatoes have been peeled.
  • Step 5: Cut the peeled tomatoes in half and use a spoon to remove the seeds.
  • Step 6: Chop the tomatoes and add them to the food processor. To chop the tomatoes, pulse them a few times.
  • Step 7: To the pureed tomatoes, add the chopped fresh basil, olive oil, garlic, and sea salt and pulse 1-2 times to combine.
  • Step 8: To make a chunky sauce, add a few more pulses to chop and mix everything together. Run the processor in longer bursts to chop the tomatoes more finely for a smoother sauce.

  • Refrigerator: Pizza sauce with fresh tomatoes can be stored in the refrigerator for up to 7 days. Make sure it’s in an airtight container. To store it in the fridge, I like to use a mason jar or a recycled jar.
  • Freezer: You can keep Italian pizza sauce in the freezer for up to three months in a well-sealed freezer-safe container.

RECIPE VARIATIONS

  • Spicy: To make a spicy version, add some crushed red pepper flakes to the sauce.
  • Garlic lovers, add more fresh garlic cloves to make your no-cook pizza sauce extra garlicky. You can even try using roasted garlic instead of fresh garlic.
  • Oil-free: If you want an oil-free pizza sauce with fresh tomatoes, leave out the oil. When added to a fresh pizza crust, the sauce loses some of its depth but tastes fantastic.

Here are some of my favorite vegetarian and vegan pizza toppings:

  • Crumbles of vegan chorizo or tofu ground beef
  • Pesto dressing
  • Jalapenos or other hot peppers

What if I don’t have fresh tomatoes?

If you don’t have fresh tomatoes, you can substitute one 28-ounce can of whole tomatoes for the pizza sauce recipe. Because canned tomatoes are more cooked and processed than fresh tomatoes, the texture may differ slightly.

Drain the can’s excess juice, place it in the food processor, and then proceed with the rest of the recipe’s instructions.

Is it necessary to remove the peel from the tomatoes before making pizza sauce with fresh tomatoes?

No, it’s not required, but the peels don’t chop up very well when pureed in a food processor or blender, and I prefer it without the peel.

Why does my sauce have a lot of liquid?

When tomatoes are chopped, some of the water in their pulp is released, and the amount of water increases over time. When I store the sauce in the refrigerator or freezer, it becomes more watery. But there is a simple solution. Simply pour it into a fine-mesh strainer and allow some of the excess water to drain.

Is this a thick sauce?

No, Italian pizza sauce made with fresh tomatoes isn’t thick. When using a food processor, it retains some of its texture, so I wouldn’t call it a thin sauce either.
