Does Pizza Dough Freeze Well?

The flavor of fresh pizza dough is unaffected by freezing, but the texture may change. According to journalist and pizza enthusiast Joe Rosenthal, extreme temperatures affect the gluten through a process known as depolymerization, making it more difficult to deal with when shaping your pizza. Depolymerization shortens the protein chains that give dough strength, making it weaker. The weak dough can easily break and result in an uneven crust, so it’s not ideal.
